Why Are My Brownies in Crumbles?

by Brownie on February 5, 2012

I have previously baked brownies and they WERE perfect. But last night, when this batch of brownies came out, instead of the usual, it was quite dry and was more like crumbs. Whenever I touched it, it crumbled into tiny crumbs! What is going on here? Did miss any ingredient? Does it have anything to do with the or what? I also changed the brand of the chocolate.. does it have anything to do with that? Please help! I'm sitting here stuck with a bunch of brownie crumbs!

Probably baked too long, or not enough egg in the mix to hold together. Or a combination of the two. Try using some egg white out of the carton, couldn’t hurt and healthy as well. I’d say use the original recipe, with double the amount of eggs with egg white and see if that works. Good luck!

Over baked. The chocolate shouldn’t have anything to do with it unless it wasn’t a baking chocolate.

Make sure you don’t over do baking powder or baking soda…that can screw up any recipe.

Well when I make brownies out of the box they always say add one egg but I add three instead so the brownies come out nice and moist.
