How Do I Make My Brownies Less Gooey and More Sturdy but Not Hard?

by Brownie on November 4, 2011

lol i have read these questions and it seems the answers are all condescending. half of the people say that the more egg you use the cakier the brownie gets while the other half thinks the contrary? so please let me know with a reliable source. i make homemade brownies and i dont want it so gooey. i dont exactly want them to be just not mushy. thank you!

In my opinion this is the perfect brownie recipe. They’re moist but not mushy. They’re perfectly dense and chocolatey.

1 C butter
3/4 C cocoa powder
2 C sugar
4 eggs
2 tsp. vanilla
1 C flour

Melt the butter. Mix the sugar and cocoa together. Stir it into the butter. Add the eggs one at a time and then mix in the vanilla. Stir in the flour. The batter is thick but thats how it should be. Pour into a prepared 9″ pan and bake at 350. Take them out when a toothpick inserted in the center comes out with just a little bit of brownie stuck to it. Underbaking it a little gives it a good moist density. Melting the butter first is vital. It makes it smoother.

Add a tbsp of real mayo in it makes it rich and moist.
