Nigella Lawson – Flourless Chocolate Brownies; Monday, 12 Nov 2007 INGREDIENTS For the brownie: 225g dark chocolate, 70% cocoa solids 225g butter 2 teaspoons vanilla extract 200g caster sugar 3 eggs, beaten 150g ground almonds 100g chopped walnuts For the sauce: 75g dark chocolate, 70% cocoa solids 125ml double cream 2 x 15ml tablespoons Camp coffee or 2 teaspoons instant espresso powder dissolved in 2 tablespoons water 1 x 15ml tablespoon golden syrup Serving Size : Makes 16 squares METHOD 1.For the brownie: 2.Preheat the oven to 170°C/gas mark 3. Melt the chocolate and butter gently over a low heat in a heavy-based saucepan. 3.Take the pan off the heat, mix in the vanilla and sugar, and let it cool a little. 4.Beat the eggs into the pan along with the ground almonds and chopped walnuts. Turn into a 24cm square baking tin or, most sensibly, use a foil one. 5.Bake in the oven for 2530 minutes, by which time the top will have set but the mixture will still be gooey. Once cooler, cut carefully, four down, four across, into 16 squidgybellied squares. 6.For the sauce: 7.Break up the chocolate and put into a heavy-based saucepan. 8.Add the remaining ingredients, then place the pan over a gentle heat and let everything melt together. 9.Once everything has melted, stir well, take off the heat and pour into a jug to serve.

But the headline that caught my eye was not what Brad and Ange were doing this week, or even the latest celeb diet which promised me I’d lose a stone in a week……..but New Scientist magazine.

The headline read: These Burgers are identical….but one will make you fatter.

Well obviously I was intrigued. Horoscopes and celebs out the window, I started reading the article there and then. When I got a comment about it not being a library I paid for the mag and read the whole thing before I got to the car.

It was one of the most fascinating articles I have read in a long time. The basic premise was that the way calories are calculated might be completely incorrect- up to 25% out.

Now I have long believed that calories are not the key to long-term weight loss and health, as they don’t take into account nutrient content. I would rather eat a bowl of natural muesli which is packed full of fibre, protein, vitamins, minerals and loads of other goodies, that a bowl of ‘low calorie’ cereal, which might be lower in calories but is low in everything else too.

Well apparently I am right!!

Calories have been calculated in the same way for over 100 years. The food is burnt in controlled conditions and the energy released from it measured. However our bodies don’t burn food – they digest it. And when digesting food many factors can affect the amount of calories we can actually extract from it. It may also give a fuller explanation of why some diets are effective.

The example used in New Scientist is a great one. We want an afternoon snack, really fancying a nice chocolate brownie, but decide to be healthier and choose a nut based cereal bar. However when we check the label, there are 50 more calories in the nut bar…so we choose the brownie.

Now apart from all the other nutrients in the nut bar, the calories are very deceptive.

Fibre is a good example. It is very resistant to digestion so we do not absorb all the calories it contains. It also provides energy for the microbes in our gut so they take their cut before we get our share. This has lead to estimates that the calories in fibre rich food are 25% lower than listed on labels.

The calories in protein may be up to 20% lower as it takes energy for our bodies to digest it. Could this be one of the factors why (despite not being hugely healthy) diets like Atkins do make us lose weight?

Simple carbohydrates (the ones we should avoid anyway) like sugar, white flour and white rice are more easily absorbed and digested than complex carbs such as oats, wholemeal flour and brown rice. Meaning we get more calories from white bread or pasta than we do from wholemeal. Even though the labels may tell us the calories in the food are the same.

These factors may combine to have such an effect than the nut bar is actually lower in calories than the brownie.

Cooking can also have a large effect on the calories we take from food. Cooking breaks down constituents in the food making them much easier to digest and absorb. So the exact same steak or serving of carrots can contain fewer calories just by being served rare or raw. Could this also help explain the success of the raw food diet for weight loss?

Surely that is it? Well no. The texture of food can have an impact. Harder foods use up much more energy in chewing and digestion than softer ones. So again the brownie loses as it will be softer and easier to chew that a hard or crunchy nut bar.

So are these amounts really significant enough to have an impact on our weight? Well yes. An average woman should have around 2000 calories per day (men around 2500). If this amount can be out by 25% we could be over or under eating a huge 500 calories per day. When we consider an over eat of just 20 calories a day can lead to a weight gain of 1kg fat per year that could have a huge impact.

So we need to look at more than just the calories in food.

This new information basically supports eating the sort of food we know we should be eating anyway! I couldn’t sum it up better than New Scientist – the foods that should make up the vast majority of our diet should be the types of food that don’t come with a label.

Lots of fruit and vegetables which are high in fibre and tend to be harder, crunchier (keep veg steamed or lightly boiled, no over boiled soggy cabbage please!) and take more chewing than other foods, should make up a large part of our diet.

Proteins should also be consumed regularly. The best types are lean meats (not processed types like ham, burgers and sausages), fish, tofu, nuts and seeds.

Carbohydrates should be complex and wholemeal – oats, brown rice, bulgar wheat and some wholemeal bread or pasta are ideal. Simple carbs like sugar, white bread, white pasta and rice should be avoided.

Pulses and beans like lentils, beans and peas are high in fibre, protein and complex carbs so brilliant to include regularly in your diet.

In short exactly what we know we should be eating!!!

So when looking at food labels, don’t read the calorie content, read the ingredients. Look for all natural ingredients, no preservatives or sugar and ideally as few ingredients as possible. If it contains anything you have never heard of or cannot pronounce, put it back on the shelf.

Maple and Pumpkin Spice Popcorn is perfect for the occasion and the taste will surprise you guests. Set out a bowl of candy corn, after all what is Halloween or Harvest Parties without that seasonal treat? Put the candy corn in a seasonal bowl, the popcorn in an orange or black plastic bucket, and then set out a platter of Aggies Homemade Brownies. For extra effect sprinkle the brownies with some seasonal orange and black decorative candies.

MAPLE & PUMPKIN SPICE POPCORN

2 tbsp brown sugar
2 tbsp maple syrup
1 1/2 tsp pumpkin spice mix
1 tbsp butter
1/2 cup chopped pecans or almonds, optional
5 cups freshly popped popcorn in a glass heatproof bowl

In a small saucepan combine the brown sugar, maple syrup, and pumpkin pie spice. Cook the mixture over medium heat, stirring constantly, for about 3 minutes or until the sugar is dissolved and the mixture is bubbly. Stir in the butter until it is melted into the hot mixture. Remove from the heat and add nuts, if using. Pour the hot mixture over the popcorn and stir with a wooden spoon or silicone spatula until all the corn is coated. Allow to coat before serving. Serve once cooled or store in an airtight container.

Valentines Day is a great opportunity to show your loved one just how sweet you think they are, and there are many delicious ways to do that. Of course, there is the traditional box of chocolates, but if you want to be a bit more creative and unique, you can try something homemade.

A cake is a fail safe valentine dessert, and there are many ways to make it special for the occasion. You can bake your cake with a heart-shaped pan, or use a knife to cut a heart shape out of a circular layer cake. If you choose the latter option, you can do a double layer cake, cut a heart out of the top layer, and fill it with jelly or ice cream. Smaller individual size heart shaped cakes are also popular.

Cupcakes are a fun and versatile way to say “I Love You.” For example, what could be more expressive than chocolate cupcakes with fudge frosting and white lettering on top? You could personalise the message or you could just go for a one word message such as “romance”, “love”, “valentine”, or “mine”. Another cute cupcake idea is brownie heart cupcakes. Make a pan of brownies, and when they are finished using a small heart shaped cookie cutter to cut out brownie hearts. Then make your chocolate cupcakes, frost them with vanilla frosting, and top them with your brownie hearts – simple and elegant.

Cut-out sugar cookies are easy and can be decorated a number of different ways. If you colour your batter with food colouring, you can make them red or pink and cut them out as all different shaped hearts. They can also be layered together with jelly centres or decorated with sprinkles or red dots. Icing and messages could also be added if you so desire.

If cookies are your thing, but you want something a little different, brown sugar meringue cookies could be for you. Baked in the shape of a heart, these can be “brushed” with food colouring or left au natural, but either way they have a classy look about them. Light and delicious all by themselves, they can also be dressed up a bit if you put two together with some ice cream in the centre, and you have meringue cookie ice cream sandwiches.

And of course, you can never go wrong with chocolate covered strawberries. Although they are a bit messy and labour intensive, the results are certainly worth the effort. For the seriously ambitious, you can use both white chocolate and dark chocolate when you are dipping them and make them look like they are wearing tuxedos. You will definitely get an “A” for effort on that one.

Looking for something to take with you on the road, or a snack to munch at your desk? Forget about those awful Powerbars and other various soy bars. Granola bars are OK, but they do not have much protein. High quality protein bars are available at the store, but for $5 a pop! We are looking for something cheap and easy, and here it is. Do-it-yourself, homemade protein bars.

Homemade Protein Bars: The Recipe

3 1/2 cups rolled oats

1 1/2 cups dried milk

1 tablespoon cinnamon

1 cup lite syrup

2 scoops protein powder

2 large egg whites or 1 egg

1 1/4 cup orange juice

1 teaspoon vanilla extract

1 cup raisins or dried fruit

Start by preheating the oven to 325 degrees. Line a cookie sheet with waxed paper, or spray on some non-stick butter flavored Pam spray. In a large metal bowl, mix all the ingredients until the oats are well coated. Spread the mix onto the cookie sheet and press down to make 10 cutting lines so you can separate them into 10 protein bars later. Bake for 15 minutes or until golden brown. While still warm, cut them apart and allow to cool before wrapping. The bars can be stored airtight at room temperature for up to 2 weeks.

Optional Upgrades

Nutty Bars – use 1 cup chopped nuts instead of dried fruit or raisins.

Fruity Bars – experiment with various extracts other than vanilla to change up the flavor.

The Protein Bar Diet – make a whole bunch of these bars with various fruits and nuts, and various flavors of protein powder. Eat the bars for 3 out of 5 meals each day and make the other two meals small. Do this for a month and see if you don’t drop a couple pounds.

Who likes peanut butter?

Who likes brownies?

If you are anything like me or the rest of the bodybuilding / powerlifting / weightlifting world, you answered ‘ME ME ME!’ to both questions. If so, this recipe is for you. I could not post an easier recipe and prepping a meal can’t be quicker unless you are unwrapping a protein bar. That said, on with the recipe!

Peanut Butter Protein Brownies : The Recipe

1 scoop of protein powder; chocolate, vanilla, or peanut butter

1 tablespoon natural peanut butter

milk or water

Mix all ingredients together in a small glass bowl; do not use plastic. If the resulting mixture is too thick add a couple drops of milk or water to loosen it up until it reaches your desired consistency. Since it is already in a glass bowl, microwave on high for 30-45 seconds. Mixture should come out to a cake/brownie like consistency.

Many friends of mine have doubted this recipe, thinking the peanut butter protein brownies would be mediocre at best. Instead what they find is a protein party in their mouths. Give this one a try for a quick high protein, high ‘healthy-fats’ snack.

Today’s Lesson About Plastics

The reason I make a big deal about the use of a glass bowl, is because you do not want to be cooking anything in microwave safe plastic containers. Plastic containers contain trace amounts of phytoestrogens, which seep into food when it is stored or cooked inside such containers. A lifetime of these estrogens can have a negative impact on testosterone levels and they tend to promote cancer in laboratory animals. It might not kill you, but your best bet in today’s toxic society is to avoid anything that could possibly be related to cancer. Every little bit helps.

Help For Your Sorority Life Game On Facebook or MySpace

Sorority Life is a fun game but sometimes the details and planning can take us away from the basics. We all want to have a top sorority, 500 sisters, Brownie points, and move up the levels.

Aiming for the high levels and searching for tricks, help and risking cheats is not going to help you if you do not have the basics down.

I have put together five easy tips to bring you back to the basics and get you started in your game, laying down the groundwork for the higher levels.

Your Sorority House Size

If your aim is really to have the top sorority, then build your house up as fast as possible.
This is the most important aspect of the game and the sooner you grow your house the better.

Start recruiting from level 1
The lower the level you are right now the easier it is going to be to have time to recruit sisters
Do not wait until you are on the higher levels – you will have much more important things to do with your time
Contact your Facebook, MySpace and blog friends

Use all the resources you can to build your sorority house.

Sorority Life Brownie Points

This is hard one because you need Brownie Points, however just be careful not to be carried away in how you obtain them.

If you can afford to buy them then you have an advantage. If you cannot afford to buy them, please do not. This may sound like odd advice but do not spend money you need in real life on your Sorority Life game. There are other ways of getting them.

There are plenty of offers available for you to fill in, and these will get you Brownie points. If you like, one or two of them then go ahead. Just be aware whom you are giving your personal information too and make sure you want the offer.

Make sure you spend a little time filling out your lottery numbers too.

Sorority Life Game Events

Chose events with the highest possible rewards and try to complete them as quickly as possible.

As you move up to the higher levels mix up the events to ensure you have a nice diverse range.
This will ensure you get all the rewards possible and opening up all the higher-level events to you.

Sorority Life Rivals – Should Your Fight?

To be honest although fighting is fun it is only wasting your resources
Instead spend time focusing on building your levels
Getting points
Recruiting new sisters

Learning More About The Sorority Life Game

The more you know about this game the easier it is to be able to get your top sorority and 500 sisters.

There are a lot of tips and information online and they all work on Facebook, MySpace, Tagged or on your iPhone. You do have to do a little searching around to find valuable information but there are some great blogs and forums full of tips.

The problem I have when I start looking on the forums is either I get distracted or if I do find what I am looking for the tip is out of date!

There is currently only one guide available called Sorority Life Blueprint.

Having all the tips, and secrets in one place makes playing this game much easier, especially where in comes to moving up the levels, getting sisters, and brownie points.

Sorority Life Blueprint Game Guide also includes free updates so instead of searching for them they come to you!

If you follow the details outlined above, you will do much better in the Sorority Life game than you ever thought possible. It is a simple matter of being careful with the time you have to spend and analyzing how you invest everything carefully.
